Unlike fat-soluble vitamins, water-soluble vitamins are not stored in our body. If you ingest more vitamins B or C than you need, your body will eliminate them through urination. Water-soluble vitamins can be found in various foods, such as vegetables, fruits, dairy and grains. However, some of these vitamins are destroyed during the cooking process, especially when foods are boiled. Choose to bake or to stew your food instead.

Similarly to fat-soluble vitamins, vitamins B and C also play important roles in our bodies. Vitamin C is an antioxidant responsible for healthy tissue and absorbing iron in our organism. Products containing the most vitamin C are berries, citrus fruits, peppers, tomatoes, broccoli and spinach.

Each of the B vitamins is responsible for a range of different bodily functions, including nerve function, metabolism, brain health and circulatory system maintenance. Make sure to eat enough nuts, whole grains, eggs, meat and bananas to get enough B vitamins.
